    Adding ALDC in beer brewing is a new technology, which began in the 1990's. ALDC can decompose a-Acetolactic Acid into Acetoin directly and rapidly. Before ALDC was put into use, as we have all known that in brewing process, a-acetolactic acid will transform into diacetyl, and diacetyl is deoxidized to Acetoin by yeast itself. This course will last about 10 days. Therefore, it will occupy the precious producing time and equipments. It is also a waste of water and electricity. When ALDC is used, diacetyl cannot come into being, thus it can leave out the course of diacetyl being deoxidized to Acetoin and shorten the fermentation cycle, heighten the beer output, reduce the cost. It will never influence any brewing technic and parameters. Moreover, it can avoid the rebound of diacetyl after beer leaving factory and guarantee the flavor of the beer.
